I’ve never had Kale before, but after running across a couple of pages regarding the dehydration of them I decided to give them a try! Almost all of the pages I found called for nutritional yeast which is something I don’t have and have never used. This led me to more explorations regarding dehydrating kale. Eventually I found several pages with different recipes and decided to give one a go!
What I made is based off of the Raw Foods Witch recipe I found, however I added and subtracted a few things.
Kale Chips:
- 1 bunch of kale
- 1 Tbsp olive oil
- 1 tsp cumin
- 1 tsp kosher salt*
- 2 generous douses of sesame oil
- Wash and dry your kale. Cut out the thick center stalk and tear them into roughly 3 inch chunks. I found it easiest to cut the center stalk out with a set of kitchen shears.
- Combine the kale in a large bowl with our oils, salt and cumin. Toss thoroughly ensuring an even coat of dispersion.
- Allow to sit for 20 minutes.
- Toss again, then place onto your dehydrator sheets in one single layer.
- Set the dehydrator to 115 and come back about 4 1/2 hours.
- Remove when crispy!
The yield for one bunch of kale is roughly 2 quart sized mason jars. I munched on the extra while putting it up. :-)
*Less salt might be more desirable to many. For less I’d use 1/2 tsps salt.

Have you done this any other way? I am looking for a way not to add all the oil but still get some flavor.
I have not actually tried this with less oil, but I wouldn’t be surprised if it were doable. You might be able to get by with 1/2 Tbsp of olive oil if you spend more time mixing it in then I did. I had no oil left over in the bottom of the bowl when I put them in the dehydrator, but I bet if you tried this going 1 tsp at a time you might find that you can achieve the same results with less oil. :-) I wouldn’t skimp on the sesame oil though…it ads a nice flavor.
